The SSP Group has secured a seven-year contract worth circa £40m to open a new international food hall at Brisbane Airport.
The company describes the food collective as the first of its kind in an Australian airport, drawing inspiration from local outdoor hawker street dining and farmers markets. The concept will feature a large centralised seating area with on-site self-order kiosks allowing passengers to order food across five restaurants.
SSP says that as global culinary tastes and trends continually evolve,
it will rotate in new food and beverage offers into the Food Collective precinct midway through the contract, ensuring the consumer offer continues to remain relevant.
Martin Ryan, executive general manager consumers for the Brisbane Airport Corporation (BAC), said: “The upgraded Café Court in the Northern end of the terminal forms the centrepiece of Stage 2 of the Domestic Terminal redevelopment and SSP’s exciting hawker-style dining options will bring a unique point of difference to Brisbane Airport’s Domestic Terminal.”
The new facility will open in November 2019 on Level 2 Departures at the northern end of Brisbane’s Domestic Terminal.
